A concept by Chef José Avila serving authentic Mexican-style barbacoa every weekend, located through the back alley at The Warehouse (right next to La Diabla on Larimer St.). This is where you’ll get a front-row view of whole animals being cooked over open flames — think rabbit, goat, lamb, pork , all slow-cooked underground in a traditional Mexican-style earth oven! 🌽 Handmade corn tortillas are pressed and fired on the comal right in front of you. If you’re looking for a fun little mountain escape, @coppermtn makes a great day trip from Denver. It’s about an hour and 20 minutes, give or take, depending on traffic. They have a lot of summer activities to choose from including go-karts, a mountain coaster, biking, and fishing. For our afternoon, we kept things relaxed and tried the bumper boats at West Lake. Tickets are $15 per person, and the ride lasts around 20 minutes. We also explored some of the local shops, picked up mini donuts from Sugar Lips, and grabbed pizza to-go from @sauceoncopper .
