If you’re new here—I moved into an apartment that turned out to have major mold issues. Within a couple weeks, I moved out, deep cleaned everything I owned, tossed what couldn’t be saved, and bounced between Airbnbs until I found a safe, mold-free space. The symptoms were wild—brain fog, skin rashes, puffy eyes, and more. But now that I’m in a clean environment, and I’m starting to feel like myself again. I’m still detoxing, still taking things slow, and focusing on reducing as much stress as possible. Healing my nervous system (still a work in progress) has been the most powerful practice. I still get minor flare-ups, but nothing like what I went through back in January. Protein and fiber all day… Bowls like this is how I balanced my hormones and keep them balanced 💕 Details For the Rice - 1 cup rice - 2 cups water - 2 tsp coconut oil - Sea salt, to taste For the Carrot Salad - 2 carrots, ribboned or shaved - A splash of apple cider vinegar - A splash of olive oil - Sea salt, to taste For the Ground Beef - 1 pack ground beef - ½ pack Siete seasoning Instructions 1. In a pot, combine rice, water, coconut oil, and a pinch of sea salt. Bring to a boil, then reduce heat, cover, and simmer until the rice is tender and water is absorbed. 2. In a bowl, toss the ribboned carrots with apple cider vinegar, olive oil, and sea salt. Set aside to marinate while everything else cooks. 3. In a skillet over medium heat, cook the ground beef until browned. Add Siete seasoning and stir well to combine. Cook until fully done and flavors meld. 4.
