Kamado Brizzy Believe it or not this was a choice brisket! This thing came out amazing in the @kamadojoe with the help of the @thermoworks RFX and Billows. This was a 12hr cook with a 4hr rest. Smoked at a consistent 225F. My first time cooking a brisket on a Kamado style grill. These things hold heat like no other. I watched so many YouTube videos on cooking a brisket on a Kamado style grill and so I used a lot of methods with my own to get the perfect brisket. Most do fat side down to protect the underside but with the water pan I felt it was enough to protect while being able to cook fat side up for the soft, crunchy bark we all know and love. The combination of @kendrick_bbq All Purpose rub and the foil boat method helped with this amazing and flavorful bark. Overall I believe this is the absolutely best way to make a brisket on a Kamado. Though this was my 1st time doing it I watched many videos before this attempt. Just 1 pass to soak in and make pliable. This year I added some Miso paste, an idea I got from my buddies @406_bbq and @unclechicosbbq The level of umami flavor it brings to this already amazing chili is unreal. 𝘽𝙀𝙀𝙁 𝘾𝙃𝙀𝙀𝙆 𝙀𝙂𝙂 𝙍𝙊𝙇𝙇𝙎 w/ Jalapeño Chimichurri A few years back, I made beef cheek lumpia, these take it to a whole new level. 💯 I seasoned the beef cheeks with @Fire & Smoke Society Super Special Prime, a top-tier brisket and steak rub, and they turned out insane. Beef cheeks are already rich, so I threw in some Cotija cheese for that creamy bite, then topped it off with a fire jalapeño chimichurri. No doubt, one of my favorite game-day snacks this year! 🔥 _______________________________________ 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨: •Beef cheeks • @fireandsmokesociety Super Special Prime Steak and Brisket Rub • Cotija cheese • Egg roll wrappers 𝙅𝙖𝙡𝙖𝙥𝙚𝙣𝙤 𝘾𝙝𝙞𝙢𝙞𝙘𝙝𝙪𝙧𝙧𝙞: • 1c chopped cilantro • 1c chopped parsley • 1 small shallot minced • 1 whole garlic minced • 2 jalapeños diced • 1 whole lime juices • 1 tbsp @fireandsmokesociety Super Special Prime Steak and Brisket Rub • 1/4c red wine vinegar • olive oil add to your preferred consistency 𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨: • Olive oil as a binder then season generously • Smoke at 225F w/ oak wood until an internal temp of 180F • Wrap in aluminum foil with beef broth then back onto smoker until an internal temp of 205F • Shred then add to egg roll wrappers w/ Cotija cheese.
