This is my family’s absolute favourite kulcha—crispy, soft, and stuffed with love.❤️Don’t forget to try this weekend. Just a regular dough, pantry ingredients, and the oven broiler does all the magic. Trust me, once you try it, you’ll skip takeout kulchas for good! Recipe: Tip: Turn your oven on broil mode 5–7 minutes before placing the kulcha, so it’s nice and hot for that perfect tandoori effect. Dough: • Whole wheat flour • Water (enough to knead a soft dough) • 1 tsp ghee Knead a soft dough and let it rest for 30–40 mins. Stuffing: • Boiled potatoes • Onion (finely chopped) • Ginger (grated) • Green chili (optional) • Cilantro (fresh dhaniya) • Salt, red chili powder, coriander powder • Crushed kasoori methi Mix well into a flavorful filling. Assembly: 1. Roll out a portion of dough slightly, fill with stuffing, and seal like a paratha. 2. Gently roll out into kulcha shape. 3. Sprinkle black & white sesame seeds + chopped cilantro on top and press lightly. To Cook: 1. Cook one side on a hot tawa till 80% done. 2. On the uncooked side, brush a mix of ghee and water. 3. Place directly on oven grill rack, cooked side down. 4. Broil until the top gets that beautiful golden, tandoori finish. Serve hot with butter, chutney, or curd!
